Flatbread, Hidden Gem

I fell in love with the quiet versatility of a flatbread recipe I found online years ago. Since then, I’ve made it my own, completely transforming the ingredients. I stopped buying bread once I made the first batch of flatbread. Now I make a batch once a week that gives me at least 4 portions.

I use my flatbread base recipe (ingredients listed below) to make all sorts of things. Sometimes, I make flatbread to have with a bowl of soup. Other times, an egg and bacon wrap, even my version of a sausage roll; the options are endless! Flatbread is quick and easy to make and requires minimal “base” ingredients. I usually add cinnamon (I add cinnamon to just about everything 😆). I also often add buttermilk powder (I’m unable to consume liquid buttermilk).

2 cups of Organic All-purpose Flour

1.5 tsp. Baking Soda

1 tsp. Sea Salt

2-3 TBSP. Extra Virgin Olive Oil (I also swap with Avocado Oil when I need “neutral” flavor)

1 TBSP of Organic Cane Sugar (I swap with maple syrup or another “sweet” addition depending on my plans for the dough)

3/4 cup cold water

Note: If you decide to add buttermilk powder, use 2TBSP maximum otherwise the dough will become too soft to use for flatbread.

Making the Dough

  1. In a large bowl, whisk the flour, baking powder, and salt together until well blended.

  2. Make a well in the middle of the flour mixture, and then add olive oil, chosen sweet ingredient, and most of the water.

  3. Switch to a rubber spatula or spoon and stir the wet ingredients into the flour mixture. If the dough seems dry, add a bit more water.

  4. When the dough comes together, transfer to a floured work surface and fold and press 5 to 8 times until smooth. (same as if making biscuits)

  5. Cover with a clean dish cloth and leave for 10 minutes.

Cooking Your Flatbread

  1. Divide the dough into six equal pieces.

  2. Dust each piece in flour and roll into whatever shape you can 😆; my flatbread is almost never actually round but roundish! 😉(Rolling thinner will make thinner bread that’s less soft in the middle. Rolling thicker will make thicker, fluffier bread.) DO IT YOUR WAY!

  3. Use medium heat and I love using a cast iron pan as it produces the best result. DO IT YOUR WAY!

  4. I use Extra Virgin Olive Oil to cook the flatbread and butter each side as it cooks. DO IT YOUR WAY!

  5. I usually flip after a few minutes checking the color and texture before flipping. The second side will need less time.

For today’s batch used to make the breakfast pie, I added buttermilk and molasses which produced a nice soft, fragrant dough. Breakfast Pie steps below (Just follow your intuition; no stress!).

Blueberry Breakfast Pie

  1. Added frozen organic blueberries, brown sugar and cane sugar to a pot. Let it all steep together for a about 10 minutes.

  2. Separated blueberries to cool ( I will use the “syrup” for drinks or whatever else).

  3. Rolled out one flatbread portion.

  4. Buttered flatbread dough (softened butter, not melted).

  5. Added blueberries only to center of the dough.

  6. Folded the dough to cover blueberries.

  7. Sealed the sides with a fork (to avoid oozing).

  8. Brushed top of the pie with remaining softened butter.

  9. Baked breakfast pie for 13 minutes, 350 degrees (for a softer pie crust, maybe try 10 minutes but for me, this pie was the perfect texture.)

Viola! Beautiful, not too sweet breakfast pie and it was delicious!

Autonomy in every area of my life is extremely important so I make my own food and even grow vegetables and herbs I’m able to. I normally prepare enough of a meal to freeze for another time. Recently, my left hand was unusable for about a week or so and I was grateful to have soup and stew frozen for meals; pop the portion into a pot and 10 minutes later…
